About the Authors
Dr. Matteo Bordiga is an assistant professor of food chemistry at Università del Piemonte Orientale, Novara, Italy. He earned his PhD in Food Science and MS in chemistry and Pharmaceutical Technologies from the same University. He has published more than fifty research papers in peer-reviewed international and national journals. He is editor ofnumerous books. Dr. Baojun Xu is a chair professor in Beijing Normal University-Hong Kong Baptist University United International College, a full English teaching college in China, Fellow of the Royal Society of Chemistry, Zhuhai Scholar Distinguished Professor, Department Head of Department of Life Sciences, program director of Food Science and Technology Program, and author of over 350 peer-reviewed papers. Dr. Xu received Ph.D. in Food Science from Chungnam National University, South Korea. He is ranked Scholar (top 0.05%) by ScholarGPSTM, ranked at #8 in Food Science and Technology in the world (#2 in China), and ranked at #14 Agricultural and Natural Sciences (#2 in China).
About Hal Smith
Tristan Morris is an Earphones Award–winning narrator. He received an MFA in acting from the New School for Drama in New York City after studying theater and philosophy at Pacific Lutheran University. His work as a voice actor began in 2011 after training with master teachers Scott Brick, Pat Fraley, and Nancy Wolfson. He works in New York City and Denver creating new theatrical works.
